Het deeg fermenteert 24 uur, wordt met de hand uitgerekt en vervolgens op hoge temperatuur in een houtgestookte oven gebakken. Daardoor krijg je precies wat wij lekker vinden aan Napolitaanse pizza: een luchtige rand, wat donkere plekjes van de oven en een zachte, chewy binnenkant. Met zes personen werkt dat verrassend goed. We bestelden verschillende pizza’s voor het midden van de tafel in plaats van zes losse hoofdgerechten. Natuurlijk moest er een klassieke Margherita bij voor de kinderen. Mijn man en vader wilden iets met wat meer toppings. Mijn moeder zei zoals altijd: “Voor mij hoeft niet zoveel.” Tien minuten later proefde ze van bijna alles.
